BBQ Wings with Spicy Southern Ranch Dip

Cajun BBQ Wings

• We start with whole wings and separate the drum from the flat
• We also remove the flapper
• NOTE: the size of whole wings is larger than frozen party wings, and better for grilling

Spicy Ranch Dip

• 1 cup of sour cream
• 1 1/2 Tablespoons of our Spicy Southern Ranch blend (or to taste)
• Salt to taste
• Mix ingredients together thoroughly and allow to chill overnight (if possible) or at least a few hours (this helps the flavors and spices meld)
• Sprinkle a little of the Spicy Southern Ranch on top (as desired) after dip has chilled

Instructions

• We rinse and pat dry the wings, lightly coat them in olive oil, then add a layer of sea salt all over, to taste
• After salting to taste, coat them in our Original All Purpose Seasonings
• Set the coated wings aside on a rack to air dry while the grill gets hot
• There are a variety of grilling methods, but we chose a simple “green egg” style at 325° over direct heat
• You can use lump charcoal and add a couple of chunks of your favorite wood for an additional smokey flavor
• Once the grill is hot, arrange the wings and close the lid. They need about 5–10 minutes before checking them
• While the wings are cooking, you can also create your own sauce or get a sauce of your choice ready to apply
• Flip each wing after 5–10 minutes and continue cooking
• The goal is to keep them moving so they don’t get too dark
• After 25–30 minutes the wings should all be the same color all around and this is when you could dip or apply your sauce
• Continue cooking for another 5 minutes until done
• The wing section should pull apart easily and you should see clear liquid (no pink juice); or internal temp of 165°

Noteworthy

After you pull your wings off the grill you can apply another round of sauce. A few pinches of cilantro or green onion makes them really pretty. Of course, you are welcome to add any other side dishes you like. Some roasted potatoes, french fries, or a few slices of celery are a good choice. There’s endless opportunities and varieties to explore! We love the powerful flavor combo of the original and ranch and remember—the more you apply the more intense the flavors will become!
