Spicy Ranch Chicken Salad Sandwich

Spicy chicken salad sandwich with our Spicy Southern Ranch dressing on the side!

Sandwich Ingredients

• Fresh croissant or similar bun
• About 4 cups roughly chopped or cubed grilled or rotisserie style chicken (breasts or thighs, your choice)
• About 1 cup of seedless grapes (quartered; red or green grapes are optional)
• 2 celery stalks finely diced
• 3 scallions thinly sliced (white and green parts)
• 2 Tablespoons dill (fresh, chopped and additional for optional garnish)
• 1 Tablespoon parsley (fresh, chopped)
• 1 Cup of real mayonnaise (Dukes or homemade is the best)
• Juice from 1 lemon
• 1 Tablespoon Dijon mustard
• Sea salt to taste (~1 teaspoon)
• Fresh ground black pepper (optional)
• 1 Tablespoon of Spicy Southern Ranch (or to taste)

Homemade Mayonnaise (optional)

• 1 room temp egg
• Fresh lemon juice (just a splash or ~1 teaspoon)
• 1/2 teaspoon white wine vinegar
• 1/2 teaspoon sea salt
• 1 teaspoon dijon mustard (optional)
• ~3/4 cup or so of light tasting olive oil

Using an immersion blender, combine ingredients in a small vessel just large enough to fit the blender. Place blender all the way in to the bottom. Turn on the blender and gently move it upwards as the egg and oil are incorporated and begin to emulsify. Continue gently moving up and down until thick.

Homemade mayonnaise, or aioli, is a great way to really take the sandwich next level! It adds an incredibly creamy texture and delicious flavor to the mix. You can also add a touch of finely chopped garlic and/or our Original or Spicy Southern Ranch seasonings to the mix to add some kick! Use this homemade mayonnaise in lieu of store bought and see how amazing it turns out!

Spicy Ranch Dressing (garnish and dipping)

• 1 cup of mayo
• 1/2 cup milk
• 1 Tablespoon of our Spicy Southern Ranch blend (or to taste)
• Squeeze of lemon juice
• Salt to taste
• Mix ingredients together thoroughly and allow to chill overnight (if possible) or at least a few hours (this helps the flavors and spices meld)

Grilled Chicken Instructions

• Rinse and trim fat from boneless chicken breast to your liking
• Lightly coat chicken breast with extra virgin olive oil and lightly season with sea salt (to taste) and our Original All Purpose Blend OR Spicy Southern Ranch
• Cook chicken in a stovetop or cast iron pan with a little avocado oil and butter OR place on pre-heated grill (~350°) and cook until chicken reaches internal temp of 165°
• Once grilled, rough chop the chicken in to small pieces or cubes about 1/2 inch thick, or smaller as desired

Chicken Salad Sandwich Assembly Instructions

• Prepare the Spicy Ranch Dressing first and set to the side or keep chilled overnight
• In a large bowl, combine the chicken, grapes, celery, scallions, dill, and parsley
• In another small bowl, mix the mayonnaise, lemon, mustard, salt, pepper, and Spicy Southern Ranch
• Add the small bowl of mayo mixture to the large bowl and stir until well mixed
• Assemble the sandwich by adding a layer of the mayo, optional lettuce, and chicken salad.
• Garnish with any additional dill and/or scallions as desired
• Serve with chips and a side of ranch dipping sauce!
