Creole Curry with Red Snapper

Ingredients

• 1 sweet onion, sliced thin
• 1 yellow, red, and green bell pepper, sliced
• 1 TBS ginger, grated
• 1 TBS garlic, minced (2–3 cloves)
• 1 TBS yellow curry paste
• 1 bunch fresh thyme
• 1 can ROTEL, drained well
• 1 can (organic) coconut milk
• 2 cups basmati rice
• 1–2 TBS TDon's Cajun All Purpose blend
• 1 large (or 2 small) red snapper filet
• 1 can black beans, rinsed and drained
• 1 bunch cilantro
• 1 lime, quartered
• Extra virgin olive oil
• Sea salt to taste

Instructions

• Heat a drizzle of extra virgin olive oil in a small pot over medium-high heat
• Add a small portion of the minced garlic and cook, stirring, until fragrant, 30 seconds
• Stir in basmati rice, 3 cups of water and 1 tsp sea salt (or to taste)
• Bring to a boil, then cover and reduce to low simmer. Cook until rice is tender, 16–18 minutes
• When rice is done, remove rice from heat but keep covered
• While the rice cooks, heat a large drizzle of oil in a pan over medium-high heat
• Sauté the onion, stirring, 1–2 minutes, then add the bell pepper and continue to cook, 2–3 minutes
• Add the ginger, garlic, and yellow curry paste, and mix well, 1 minute
• Add the thyme, ROTEL, coconut milk, T-Don’s all purpose cajun seasoning, and sea salt, mixing together, 1 minute
• Meanwhile, season your snapper filet with sea salt and T-Don’s all purpose cajun seasoning
• Bring the sauce and vegetables to a simmer, then add in your fish filet
• Cover and simmer on medium heat for 6–7 minutes on each side or until snapper is cooked and flaky to the touch
• Serve the snapper and veggies over the plate of basmati rice, adding additional sauce as desired
• Garnish with cilantro and lime

Noteworthy

Use organic ingredients whenever possible. Most other cajun seasonings are salt and cayenne pepper based, which often ends up being too spicy or salty.
