Cajun Sprouted Lentil Vegetable Soup

Ingredients

• 1 sweet onion, diced
• 4 carrots, diced
• 4–5 celery stalks, diced
• 2 bell peppers, diced
• 1 poblano pepper, diced
• 1 package cherry tomatoes, sliced in half
• 2 small zucchini, diced
• 1 large squash, diced
• 2 containers vegetable broth
• 2 TBS TDon's Cajun All Purpose blend
• 1 bag of sprouted lentils, cooked and cooled
• Extra virgin olive oil
• Sea salt to taste

Instructions

• In a small stock pot, cook your sprouted lentils according to package instructions. Set aside to cool.
• In a large stock pot, add a large drizzle of extra virgin olive oil. On medium-high heat add your diced onions, carrots, and celery. Cook, 3–5 minutes.
• Add the remaining ingredients and bring to a simmer. Cook 5–10 minutes.
• Serve the the soup with a garnish of sprouted lentils or some broccoli or alfalfa sprouts

Noteworthy

Use organic ingredients whenever possible. Most other cajun seasonings are salt and cayenne pepper based, which often ends up being too spicy or salty.
