Cajun Bison and Black Bean Bowls

Ingredients

• 1 lb okra, trimmed and cut in half
• 1 small package cherry tomatoes, cut in half
• 1 clove garlic, finely diced
• 2 bell peppers, sliced
• 1 lb green beans, cut in half
• 2 lbs primal ground bison
• 3–4 TBS TDon's Cajun All Purpose blend
• 2 avocado, seasoned and lightly mashed
• 1 can black beans, rinsed and drained
• 2 cups basmati rice
• 1 bunch cilantro, minced
• Chili garlic infused olive oil
• Extra virgin olive oil
• Sea salt to taste

Instructions

• Preheat oven to 375°
• Heat a drizzle of extra virgin olive oil in a small pot over medium-high heat
• Add the garlic and cook, stirring, until fragrant, 30 seconds
• Stir in basmati rice, 3 cups of water and 1 tsp sea salt (or to taste)
• Bring to a boil, then cover and reduce to low simmer. Cook until rice is tender, 16–18 minutes
• When rice is done, remove rice from heat but keep covered
• While the rice cooks, in a medium bowl combine halved okra & cherry tomatoes
• Season okra and tomatoes with chili garlic oil, TDon’s, and sea salt; mix thoroughly
• Season the bell peppers with olive oil and sea salt 
• Spread the okra, tomatoes, and bell peppers out on a sheet tray
• On a separate sheet tray, spread out and season the green beans with olive oil and sea salt
• Bake all the veggies at 375° for 12–15 minutes or until they are cooked and tender; remove and let cool
• Heat a drizzle of olive oil in a medium pan on medium-high heat
• Add primal ground bison to the pan and cook with 3–4 TBS of TDons and salt to taste
• Cook, breaking into pieces until browned and cooked through, then remove from heat and cool
• Before assembly, and 1 TBS of butter to the rice and fluff with a fork
• Assemble cajun bison bowls with desired ingredients and garnish with cilantro and lime if desired

Noteworthy

Use organic ingredients whenever possible. Most other cajun seasonings are salt and cayenne pepper based, which often ends up being too spicy or salty. TDon’s Cajun is all natural and uniquely robust, with no added salt, putting you in the driver’s seat in regards to the amount of heat and salt you desire in your cajun and creole dishes. For an added pop, add your favorite hot sauce and a splash of lime!
