Southern Roasted Chicken

Roasted, southern chicken is an incredibly simple way to enjoy a truly amazing, mouth-watering, traditional recipe. It’s full of savory flavor and can be paired easily with other traditional BBQ items like potato salad, coleslaw, and sliced pickles and onions.

The best part about this recipe is that you don’t need to prepare or purchase all kinds of crazy ingredients. And there are plenty of roasted chicken recipes out there. There is no need to go buy tons of different ingredients and mix them all together. We’ve done all the hard work for you. Just use TDon’s!


Ingredients

• Half chicken(s)
• Avocado oil (or extra virgin olive oil); enough to lightly coat chicken
• 2–4 Tablespoons (or, to taste) TDon’s Original All Purpose Cajun Seasonings
• Sea salt (to taste)


Directions

• Preheat your oven to 425°
• Place a layer of foil in the bottom of a roasting pan. (You can also grease the pan if you prefer)
• While the oven is heating, prepare the chicken by rinsing throughly
• You can prepare as many half chickens as you like or as many as will fit in your roasting pan
• Pat the chicken dry with a paper towel.
• Trim off any unwanted portions of the chicken
• Apply a thin layer of avocado oil (or extra virgin olive oil) over all the surfaces
• Apply sea salt to taste over all the outside of your chicken (your preference on the amount)
• Apply TDon’s seasoning to the outside - the more you use the spicier it will be. We use a lot.
• Place on pan and allow to cook at 475 for 20-30 minutes
• Reduce heat to 375 and cook until internal temp reaches approximately 165°
• Total cook time varies depending on the size of your chicken
• Remove from oven and allow to rest for 5-10 minutes
• Slice and enjoy!

 
 

Our method

We lightly, and I mean lightly, coat the half chicken with avocado oil. We use just enough so that the seasoning sticks. It sticks pretty good without oil, so you can skip it, but we like tons of flavor so we do apply it lightly.

After we’ve coated the chicken in oil we apply a thin layer of sea salt. We then apply generous amounts of TDon’s, of course. You actually just shake it all over. You don’t have to rub it in. Just allow it to fall evenly over every portion of the chicken making sure to connect with both sides.

From there, place on the roasting pan and roast in preheated oven at 425 for 20-30 minutes. Then reduce heat to 375 and cook until a thermometer inserted in a thigh reads 165 degrees F (74 degrees C), or about 1 hour. Maybe a little longer if needed. Remove from oven and let rest for 10 minutes before slicing.

The bottom of the pan is going to be full of juicy drippings, which can be used as a base for your gravy or as dipping sauce as well. It’s amazing. We hope you enjoy!
